GINGERBREAD

INGREDIENTS:
Backing soda 1 teaspoon
Butter 150 gr
Cinnamon 2 teaspoon
Cloves ½ teaspoon
Floor 00 350 gr
Honey 150 gr
Nutmeg ¼ teaspoon
Salt pinch
Egg 1
Ginger 2 teaspoon
Sugar 160 gr
FOR COLOURED GLAZES:
Food coloring (as you like it)
1 Egg albumen
Icing sugar 200 gr

METHOD:
In large bowl or mixer bowl sift the flour with sugar, add spices and baking soda and finally the cold butter cut into small pieces.
Then add the honey and operate at medium speed until mixture is crumbly. Finally add the egg and mix well again a few second until you obtain a ball. Wrap the gingerbread dough in plastic cling paper and place in the refrigerator for at least one hour; After this time, roll out the dough with a rolling pin to obtain a thickness of about 4 mm. Cut the dough with a biscuit cutter of various forms
place on a baking sheet covered with parchment paper and put into the oven at 180 degrees C for about 10-12 minutes, until they are golden .
Meanwhile prepare the glaze by mounting the egg white until stiff and incorporate a little at a time, still beating, the icing sugar;
Divide the frosting into small bowls as there are so many colors that you want to use and add food coloring in each one. Place it in a pastry bag with the flat and very narrow nozzle and decorate.
